Ingredients


    Butter, salted, 2/3 cup melted
    Cocoa, dry powder, unsweetened, 1 cup
    8 egg whites
    2 whole eggs
    8 egg yolks
    Coconut Milk, 1 cup
    Granulated Sugar, 2 cup
    Salt, 1 tsp
    Vanilla Extract, 1 tsp
    Coconut Flour 1 cup

Directions

Add cocoa powder with the melted butter and mix together. Beat egg whites together until stiff peaks form, set aside. In a separate bowl mix together 2 whole eggs, 8 yolks, coconut milk, sugar, salt and vanilla. Stir in cocoa mixture. Whisk coconut flour into batter until there are no lumps. Fold egg whites into batter. Pour batter into greased 13 x 9 greased pan. Bake at 350F for 45-50 mins or until knife inserted into center comes out clean. Cool. Frost with Coconut Pecan Frosting.

    I'm in love with this recipe! I adapted it to cupcakes (baked at the same temperature for 40 minutes) and substituted a vegan butter. (Note: I had to whisk the batter for quite a while to smooth it out, possibly because of the vegan butter.) The cake was fluffy and delicious. So pleased!! - 3/19/11
