Introduction

Ingredients

450g Low fat plain or vanilla yoghurt
125g sponge fingers
70ml regular coffee
1/2 oz Kahlua
30g Lindt 70% dark chocolate
Directions
1. Pop the plain/vanilla yoghurt straight into the freezer for an hour or so until part frozen. Line a loaf tin with either cling film or grease proof paper. Set aside.
2. In a shallow bowl mix together the coffee and the Kaluha. One by one quickly dip the sponge fingers into the coffee mixture. NB: you don’t want them to be too soggy. As each finger gets dipped arrange them in a layer to cover the bottom of the loaf tin (this should use approximately half of the fingers).
3. Spoon over the part frozen yoghurt and smooth out with the back of the spoon. Scatter over half of the grated chocolate. Repeat with the remaining sponge finger, yoghurt and chocolate. Place the loaf tin in the freezer for 1-2 hours if time allows.
4. Cut into six slices and serve.
