Number of Servings: 6

Ingredients

1 jicama, pared (approx. 1 lb)
    2 cucumbers, pared
    2 fresh limes
1 tsp Cayenne (or red pepper flakes), or to taste
1 tsp Kosher Salt, or to taste

Directions

Pare the jicama and cut into finger-sized spears. Layer in the bottom of a resealable dish. Squeeze lime juice over spears and sprinkle with salt and cayenne to taste. Pare cucumber and cut in spears. Layer on top of jicama, squeeze on lime and sprinkle salt and cayenne (note: the cucumbers will store longer if they are on top and not sitting in juice in the bottom of the container.). Let chill in fridge and serve.

If prepared in advance, drizzle on fresh lime juice before serving.

Great with Margaritas!
