Introduction

I don't like the taste of cilantro, and every pineapple salsa recipe I found had it, so I decided to create my own. I don't like the taste of cilantro, and every pineapple salsa recipe I found had it, so I decided to create my own.
Number of Servings: 8

Ingredients

    1 sm. clove garlic
    1/2 med. sweet onion
    1 sm. jalapeno pepper, seeded
    1 20 oz. can crushed pineapple in juice, drained, juice reserved
    1/2 mango
    1 T. brown sugar
    1 sm. (1.5 oz) box raisins
    fresh mint

Directions

Place onion, garlic, and jalapeno in bowl of food processor; process until chopped fine. Add mango and pulse until chopped to desired size. Add drained pineapple and brown sugar. Stir in raisins and finely chopped mint. Refrigerate for 2 hours or overnight.

Makes approximately 8 half-cup servings.
