Introduction

These pita pockets are great breakfast sandwiches when you need to get out of the house in a hurry in the morning. These pita pockets are great breakfast sandwiches when you need to get out of the house in a hurry in the morning.
Number of Servings: 4

Ingredients

    6 eggs
    1/3 cup milk
    salt and pepper to taste
    1/3 cup Shredded Cheddar/Jack Cheese
    1 Tbsp butter
    2 Trader Joes Whole Wheat Pita Pockets

Directions

Heat oven to 250 degrees and place two pita pockets on a sheet pan in oven. While pitas are warming, crack 6 eggs into a bowl, add milk, salt and pepper and mix. Heat a skillet on high heat and add one tablespoon of butter (you can use non-stick spray to lower calories). When butter melts, add egg mixture to pan and reduce heat to medium high. Stir gently as eggs cook. When eggs are done, remove from heat and sprinkle cheese on top.

Remove pitas from oven and cut each in half. Open pocket and scoop one quarter of eggs into pocket. Enjoy.
