Introduction

This makes a good, creamy salad dressing with a real kick. Without the peppers, this makes a great base for any very low calorie salad dressing. You will not be disapointed if you use real Greek Yogurt; there is no substitute. The amount of Chipotle pepper I add to this gives it a very substantial kick. I like it this way, you may want to experiment with less at first. I use the same base for a creamy caesar dressing for my wife, leaving out the chipotle pepper and adding more garlic and 2 tsp of Worcester sauce. It's great fresh, but even better after it sits in the fridge a day or so letting the flavors meld.

I listed this as making 4 servings, but it is so lite and low in everything you can indulge yourself. I encourage you to have fun with this recipe and let me know of any other variences you come up with. mailbox@tmaine.com

Ingredients

    1/4 Cup Greek, Plain Nonfat Yogurt
    1/4 oz Chipotle Pepper in Adobo Sauce (about 1/3 of a medium pepper)
    1 Tbsp Honey Mustard
    1 tsp dried garlic flakes
    1 tsp dried parsley
    1 tsp sweet relish
    1/2 sprig of fresh baby dill
    Pepper

Directions

Put all ingredients into your mini food processor and blend until the chipotle peppers and dried garlic are in very small pieces.

Makes 4 servings, but enjoy all you want. It's very very low in calories and sodium.
