Directions
meal for two 8oz red lentils
2leavel teaspoonsground ginger
1level teaspoon ground cumin
1level teaspoon turmeric
2 potatoes
2tablespoon butter
1 large onion
1small green pepper
1small red pepper
6 small mushrooms
hand full frozen peas
small bits of coliflower
1level teaspoon curry powder optional
1 clove garlic
4 tomatoes chopped
salt and pepper if you want
in a saucepan with a pint and a half of wateradd one teaspoon each ofginger, cumin, turmericand saltbring itallto the boilstir in lentilsgentle simmerand cook for 5 mins then add potatoes and continue cooking untill lentils have gone mushy keep stiring so it dosent stick heat a frying pan with low fat butter and fry toms, mushrooms ,onions peppers coliflower and peas until onion are browned then add to the lentils cook for about 5 mins stiring from time to time them taste add what you want then serve with brown rice
