Introduction

Delicious, hearty and HEALTHY! Delicious, hearty and HEALTHY!
Number of Servings: 10

Ingredients

    2 Tbsp Olive Oil
    1/2 Cup Chopped Onions
    3 Cloves Chopped Garlic
    6 Cups Chicken Broth
    3 Cups Fresh Broccoli (2 crowns)
    3 Cups Fresh Cauliflower (half lg, head)
    1 Cup Sharp Cheddar Cheese
    2 Cups Potato Flakes

    I usually start with:
    1 tsp salt
    1 tsp lemon pepper
    1 tsp thyme
    1/4 tsp cayenne pepper

Directions

Saute onion and garlic in heated olive oil until translucent.

Add Chicken Broth, broccoli and cauliflower. Simmer 30 minutes.

Make smooth with blender or immersion blender.

Add 2 cups potato flakes, stir in and let sit for a minute, stir again.

Stir in cheese.

Season to taste with salt, lemon pepper, thyme, cayenne pepper.

Serve with Hot Crusty French Bread and/or browned slices of sausage. Enjoy!
