Introduction

Adding peanut butter and some strawberry preserves livens up regular sugar cookies.
Translation: I got creative with what I had on hand while baking.

Ingredients

    (1) Betty Crocker Sugar Cookie Mix
    (1) Egg
    (1/2 cup) Butter or Margarine (I used Promise Light)
    (1 tsp) Vanilla Extract
    (1.5 Tbsp) Lemon Juice
    (7 Tbsp) Strawberry Preserves
    (0.5 cup) Peanut Butter

Directions

1. Preheat oven to 375 degrees
2. Prepare Sugar cookie mix according to package until dough almost completely forms
3. Add vanilla and lemon juice and finish mixing dough.
(AN: I eyeball the lemon juice and vanilla - feel free to adjust to personal taste)
4. Take dough and roll it out on a cutting board or prepared surface (I dusted lightly with flour)
5. Cut the cookie dough into about 36 pieces
6. Roll 1 piece of dough into a ball then press thumb down into center
7. Place thumbprint dough onto cookie sheet
8. Add just enough preserves to fill in thumbprint
9. Repeat steps 6-8 until all the cookies are formed or cookie sheet is full (I wound up making 2 batches with what I had)
10. When cookies are done, heat up peanut butter in the microwave, about 20-30 seconds, and stir it to make sure it is almost completely melted
11. Drizzle peanut butter over the cookies
12. Let cool and enjoy
