Ingredients

    Chicken Breast, no skin, 16 ounces about 4 4oz breast
    Olive Oil, 1 tbsp
    Rosemary, 1 tbsp, chopped
    Garlic, 1 clove, finely diced
    Pepper, black, 1 tsp

Directions

1. Gently pound breast with mallet or rolling pin to 1/4 inch thick
2. Brush with olive oil. Sprinkle remaining ingredients on chicken. Cover and Refrigerate at least 1 hour before grilling.
3. Grill for 3 minutes each side(because the breast is thin). Serve with sides or as a sandwich.

    If you don't have a meat mallet or rolling pin, a wine bottle makes a good substitute! Use a toothed mallet with care--it can shred the tender meat. - 6/6/14

    This seems delicious and very simple. The only comment I would make is that the rosemary should probably fresh and not dried. Pick it up in the produce aisle, not the spice/baking aisle. Fresh is used in these quick recipes, dried is used in recipes that cook for a long time, e.g. stews. - 6/6/14

    I think the pounding helps to make the chicken more tender. Having fresh herbs outside the door was one of the best decisions I have made this past decade. I couldn't imagine my summer without them! - 8/23/09
