    1 medium onion, chopped
    1 teaspoon Spice World minced garlic (or 2 cloves chopped garlic)
    1 14-oz can diced tomatoes
    2 15-oz cans black beans (I used Bush's low-sodium)
    1 8-oz can corn
    1 package Morningstar Farms soy crumbles
    2 tablespoons chili powder
    2 tablespoons ground cumin
    1 cup water
    1 dash salt
    1 dash pepper
    (optional) 1/4 teaspoon cayenne pepper - I did not use.


1. Saute onions and garlic in large saucepan sprayed with non-stick spray until tender.
2. Add diced tomatoes, black beans with liquid, corn (drained), water, and soy crumbles. Cook on medium heat.
3. Add chili powder, cumin, salt and pepper to taste. Add ground red pepper for a spicier flavor.
4. Simmer uncovered for 30 minutes until desired consistency.

Makes 6 large servings
