Ingredients

    2 skinless boneless chicken breasts, seasoned
    1 1/3 cup frozen corn
    2 cups chopped cabbage
    1 tbs Helmann's Real Mayonnaise
    7 cups chopped green leaf lettuce
    1/4 cup diced red onion
    2 oz (2 sq. in) Cheddar cheese (50% red. fat Cabot)

    Dressing:
    4 tbs Barbecue Sauce (I like Stubb's Hickory Bourbon)
    1 tbs Apple Cider Vinegar
    1/2 tsp Spicy Brown Mustard

Directions

Fully cook seasoned chicken breasts. Set aside and cut into bite-sized pieces.

Cook corn according to package directions. Drain and rinse with cold water.

Combine cabbage and mayo. Put in salad bowl.
Add lettuce, onion, corn.
Add dressing and toss to coat.

Divide the salad onto two dinner plates.
Add chicken and cheese.

Enjoy!
