Ingredients

    Salad:
    1 Avocado, peeled and cut into 1" chunks
    1/2 Cucumber, peeled and cut into 1" chunks
    1 Cup Cherry Tomatoes, halved
    1-2 Scallions, chopped into 1/4-1/2" pieces

    Dressing:
    Juice of 1 Lime
    1 Tbsp Fresh Cilantro, Chopped
    1 tsp Olive Oil
    Sea Salt, to taste
    Fresh Pepper, to taste

Directions

Makes 4 servings of approximately 1 Cup each.

Peel and chop vegetables into a medium-sized bowl.

In a small bowl combine dressing ingredients, and pour over salad. Mix gently but well. Serves 4 as a side dish, or 2 as a lunch salad served with crusty bread.
