Ingredients

3 lbs chicken breasts (from frozen) cubed
3 bay leaves
4 cardomom pods
4.5 tsp garam masala
5 cups sliced onions
3 tbsp garlic paste
3 tbsp ginger paste
3 tbsp chopped green chillies (we use jared jalapeno slices if we don't have this)
1.5 cups yogurt
3 tbsp dried fenugreek leaves (methi)
1.5 tsp tumeric powder
4.5 tsp corriander powder
4.5 tsp corriander leaves (cilantro - we use dried )
salt to taste
3 tbsp olive oil
Directions
Clean, skin, wash and cut chicken into medium sized pieces.
Peel, wash and chop onions. Remove stem, wash and chop green chillies.
Heat oil in a pan. Add whole garam masala and bay leaves. Sauté until cardamoms starts to crackle.
Add chopped onions and cook until translucent and soft. Make sure to stir continuously. Add chopped ginger, garlic paste, turmeric powder, coriander powder and chopped green chillies. Sauté for a minute.
Add chicken pieces and beaten yogurt and cook on a high heat for 7-8 minutes. Add methi, garam masala powder, coriander, salt and three fourths cup of water. Cover the pan and cook on a low heat for ten minutes.
Serve hot.
