Introduction

Basic veggie casserole with cream cheese and quinoa - one pot wonder! Basic veggie casserole with cream cheese and quinoa - one pot wonder!
Number of Servings: 6

Ingredients

    7 cloves of garlic - chopped
    5 small onions - roughly chopped
    3 cups sliced carrots
    5 cups of broccoli
    5 cups of cauliflower
    1 1/4 cup dried quinoa
    5 tablespoons of light cream cheese
    2 cups of almond milk
    4 cups of water

Directions

Using a rather large electric frying pan, or roasting pan in an oven, coat bottom with olive oil, toss in chopped garlic, onions and carrots. Sautee for a few minutes. Add your cauliflower, broccoli and quinoa and 4 cups of water.

Cook on 300F or medium oven until quinoa is done, add more water if need be.

Put almond milk and cream cheese in a blender and liquify. Add black pepper, and any other spices you like.

Pour over cooking food, and mix together. let simmer for 10 min.

Makes about 6 - 8 servings
