Ingredients

1/4 c unsalted butter
1 c turbinado sugar (sugar in the raw)
1 c salted, chunky, natural peanut butter
1 large egg
1/2 t vanilla
1/2 t baking soda
1/4 t salt
3/4 c whole wheat flour
Directions
Position racks in center of oven and preheat to 350.
I use a stand mixer with paddle attachment,
Beat butter and sugar until well blended.
Add PB, mix well. Beat in the egg and vanilla.
Mix in baking soda and salt.
Then thoroughly mix in the flour.
Form dough into 1 1/4 in balls. Dip 1/2 of dough ball into additional turbinado sugar.
Place sugar side up on an ungreased cookie sheet about 3 inches apart. Use a flat-bottomed glass to flatten to 1/4 inch.
Bake until golden brown, about 16 minutes.
Cool 2 minutes on cookie sheet, then transfer to wire racks to cool completely.
Makes about 28.
