    * *Whole Wheat Flour, 0.5 cup
    * *Wheat flour, white, all-purpose, unenriched, .5 cup
    * Baking Soda, .5 tsp
    * Salt, .125 tsp
    * Vanilla Extract, .5 tsp
    * Egg white, 1 serving
    * Brown Sugar, .5 cup, unpacked
    * Butter, salted, 2 tbsp
    * *Motts Natural Applesause (No Sugar Added), 0.25 cup
    * *Yoplait Light Vanilla Yogurt (6oz), .145 serving
    * Blueberries, fresh, 1 cup


combine dry ingredients
cream together butter, applesauce, yogurt, and brown sugar
then add egg and vanilla
then stir in dry ingredients
add blueberries and bake at 350 for 10-15min

  • Absolutely delicious
    For me there were too many blueberries. I only used half of the suggested and there were still too many. I will use a 1/4 the next time I make it.
    Oh, I also used all whole wheat flour.
    It also took longer than 15 minutes for them to cook.

  • I didn't have yoplait so I used Oikos Greek yoghurt with honey and I had so many blackberries that I used those instead. The muffins turned out well, very moist and tasty! Ooops got flour all over my laptop. Thanks for sharing! - 6/15/10
