Ingredients

    Organic ingredients are readily available

    Whole wheat flour 1 cup
    Oat bran 1/2 cup
    baking powder 1 Tbsp
    1/4 tsp salt
    1/2 tsp fresh grated nutmeg
    1/2 tsp cinnamon
    1 1/2 cup raisin bran cereal (Cascadian Farms)

    1 egg
    1/4 cup canola oil
    1/4 cup honey
    3/4 cup skim milk

Directions

Preheat oven to 400. Prepare muffin tin with foil baking cups.
Combine dry ingredients. Separately beat egg, add oil, honey and milk.
Add to dry ingredients and mix until moist. Spoon into foil lined muffin pan.
Bake 30 - 35 minutes
Makes six muffins.
