Number of Servings: 12

Ingredients

    1 1/2 cup all purpose flour
    1 tsp ground cinnamon
    1/2 tsp baking powder
    1/2 tsp salt
    1 tsp ground nutmeg
    2 large eggs
    1/2 cup packed brown sugar
    1/3 cup vegetable oil
    2 cup shredded carrots
    8 oz crushed pineapple, drained

Directions

1) Preheat oven to 350 F. Grease 13'x9' pan. In a medium bowl mix together flour, cinnamon, nutmeg, baking powder and salt.
2) In a large bowl mix together eggs, oil, and brown sugar until well combined, about 1 minute.
3) Add flour mixture, carrots and pineapple to egg mixtured until just mixed.
4) Pour into pan and bake until top sets and sides pull away from pan, about 25-35 minutes.
Makes 12 bars.
