Ingredients

5 Large Eggs
4 Egg Whites
1 Cup All Purpose Flour
1 Tsp. Baking Powder
2 1/2 C Non-Fat Milk
1 Med Onion, Chopped
1/2 Red Bell Pepper, Chopped
6 Med Mushrooms, Sliced
5 oz. Fresh Spinach
1 1/4 C Reduced Fat Mexican Cheese Blend
1 Tbls Olive Oil
Salt & Pepper
Directions
Preheat oven to 400 degrees. Lightly spray to pie tins. Saute onion & bell pepper in olive oil. Add mushrooms until soft. Add spinach until wilted.
Blend eggs, flour, baking powder and milk. Add vegetables and pour into pie tins. Top with cheese.
Bake for 30 minutes or until middle is done and sides and top are brown.
