Ingredients

2 (3.75 2 layer) cans of sardines in olive oil
2 Tbl. finely chopped parsley
1 Tbl. Champagne vinegar
Lemon zest to taste
Ground black pepper to taste
4 Slices of Pepperidge Farm whole grain bread
1 Hass avocado
Salt to taste
Directions
Drain the oil from one can of sardines into a small bowl and reserve. Drain the other can in another small bowl and whisk in the parsley, vinegar, lemon zest, and pepper.
Add one of the cans of sardines, stir to combine and marinate for about an hour.
When ready, place bread on a pan, and burs each slice with the reserved oil (one side only). Have rack approximatel 3 inches from top of oven. Place bread in oven and broil for 3 to 3 minutes or till golden brown.
Remove bread and after mashing avocado, evenly distribute on each piece of bread. Top evenly with sardine marinated sardines and then place whole sardines evenly on the slices. Pour remaining dressing on top and sprinkle with parsley.
Season with salt if desired.
