Introduction

This is a wonderful recipe that can be used as empanada filling or for soft tacos. This is a wonderful recipe that can be used as empanada filling or for soft tacos.

Ingredients

    3 Tbs olive oil
    one medium onion, finely diced
    3 garlic cloves
    1 tsp ground cumin
    1 boneless skinless chicken breast, cut in small pieces
    1 can black beans, drained
    1 tomato, diced
    Juice from one lemon
    1/2 Cup golden raisens
    1/2 Cup cilantro

Directions

Add raisins to 2 cups warm water and set aside. Heat olive oil in pan. Add onion and cook until they are soft (not browned.) Add garlic, cook until clear (30 seconds) add 1 tsp cumin and stir until evenly coated. Add chicken and cook until no longer pink. Add black beans, tomato, and juice from one lemon. Cook until heated through. Remove from heat, let cool briefly and add raisins and cilantro. Allow to sit up to overnight. Can be added to 4 inch rounds of pie crusts, or served in soft tacos.
