Ingredients

1 box Bowtie Pasta
1 full chicken breast (2 split), skinless, boneless (cooked and shredded)
2 tbsp red wine vinegar
5 tbsp pre-made pesto
1/2 large red bell pepper (chopped)
5-6 green onions (chopped)
1/2 16oz bag of frozen peas
1 8 oz container of fresh mozzarella pearls or small rounds
4 oz of grated parmesan reggiano cheese
Directions
Cook pasta according to package instructions adding peas during the last 2 minutes of cooking time. Drain and run under cool water to stop cooking
Salt and Pepper Chicken breasts to taste and cook whichever way you prefer (you may also use pre-cooked chicken). Shred into bite-size pieces
Chop peppers and onions into a medium dice. Cut mozzarella into bite size pieces.
Combine pesto, red wine vinegar, peppers, onions, mozzarella, parmesan,chicken, pasta, and peas together in a large bowl.
Serve immediately or chill. This salad is actually better the 2nd day, after the flavors have had a chance to mingle.
