Ingredients

    1 small box frozen Spinach 9 or 10 oz
    1 cup cooked rice (i use brown)
    1 cup grated sharp cheddar cheese (2%)
    1/3 cup milk
    1 tsp thyme (i prefer ground or fresh that you grind fine in a coffee grinder)
    2 TBSP margarine (light is fine)
    1/4 cup onions
    2 eggs slightly beaten
    salt and pepper to taste



Directions

Cook and drain spinach. Put a small amount of water in a saucepan and over med-high heat bring frozen spinach to unfrozen. Once thawed you can drain well and set aside. Sautee' onions for a few mins over med heat until they are clearish or opaque. Just so they start to sweat and are not raw anymore. Add all ingredients together, mix well, pour into casserole dish and bake in oven on 350 for 20-25 mins or until the wetness has gone from the bottom. Makes 9 servings. Enjoy!
