Introduction

Number of Servings: 4

Ingredients

    8oz of Lite soy crumbles (Gimmel Lean)
    2 med. Onions
    1Tbsp Safflower oil
    1 sm head cabbage chopped
    2 15 oz cans of diced tomatos
    1 c white rice (you can substitue brown rice if you would like)
    2 c low sodium vegetable broth

Directions

In a non-stick skillet break up and brown soy crumbles onions and garlic in oil until onions are transluscent. Transfer to 9x13 baking dish, mix in remaining ingredients. Bake in a 350 degree oven for at least 30 minutes or until rice is tender.

Serve hot.

Makes 4 - 1.5 cup servings
