Ingredients

    Chicken thighs, boneless and skinless - one package
    Onion, 1/2, sliced
    Red pepper, 1/2, sliced
    Frozen peas, 1/2 cup
    Brown rice, 3 cups
    Soy sauce, ground ginger, salt and pepper to taste
    Olive oil, 1 T

Directions

Brown the chicken in oil. Add the onion and pepper to the same pot. Continue cooking. Add the pre-cooked rice, peas and seasonings. Cook until the chicken is done.
