Introduction

I was tired of the same old same old recipe that I've seen online for salmon patties. So I had an epiphany on day when I had some left over sweet potatoes. Number of Servings: 15

Ingredients

    * Sweet potato, baked (5 min microwave) in skin, without salt, 1 small
    * Pink Salmon (canned), .5 can
    * Egg, fresh, 1 large
    * *Old Bay Seasoning, 1.5 tsp
    * *Progresso Bread Crumbs - Italian Style, 0.25 cup
    * Pepper, black, 1.5 tbsp
    * Garlic Powder, 1 tsp
    * *Onion powder, 1 tsp
    * *Onion, chopped, .10 cup

Tips

Add an egg to the mixture for a lighter taste.
Lemon juice on top and muy rico.


Directions

1. Mash sweet potatoes in a large bowl.
2. Add all other ingredients (except olive oil)
3.Blend together using a fork.
4.Form into 15 small patties
5. Place patties on greased baking dish with the other 1 Tbsp of olive oil.
6. Back for 20 minutes.

Serve with salsa! Bon appetit
