Introduction

Ingredients

    Yellow Cornmeal, 2 cup
    Silk Light (Plain), 1.5 cup
    Shortening, Crisco, 4 tbsp
    Egg, fresh, 1 medium

Directions

Preheat oven to 400 degrees. Place shortening in 8 inch iron skillet and put in oven about 5 minutes or until the shortening melts. Mix egg and milk together, then stir in cornmeal until smooth. Add the melted shortening from the skillet and stir until incorporated. Pour the mix into the skillet and bake on top rack of 400 degree oven for 25 - 30 minutes. Remove and cool slightly, then turn cornbread out from pan. I cut into 12 wedges. Larger wedges will change the nutritional info.
