Introduction

Ingredients

    Coating =
    1/4 cup Whole Wheat Flour
    1/4 cup Panko Bread Crumbs
    1 Large Egg
    1/2 tbsp Reduced Sodium Chicken Broth
    Pinch of Garlic Powder
    Pinch of Paprika
    Pinch of Black Pepper

    Cakes =
    3 Garlic Cloves, minced
    1 can of Shrimp, drained
    1 can of Crab, drained
    1/4 cup Arugula, roughly chopped
    1/4 cup Panko Bread Crumbs
    2 tbsp Parmesan & Romano cheese
    2 tbsp Honey
    1 tsp Old Bay Seasoning
    1 tsp Worcestershire Sauce
    1 tsp Lime Zest
    1 tsp Dijon Mustard
    1 tsp Extra Virgin Olive Oil
    1/2 tsp Thyme
    1/2 tsp Coriander
    Pinch of Black Pepper
    Handful of Fresh Chives

Directions

1) Preheat nonstick skillet.

For Coating

2) On a plate, combine flour and black pepper

3) In a bowl, beat egg with chicken broth

4) On another plate, combine panko, garlic powder, and paprika

For Cakes

5) With hands, mix all cake ingredients (except EVOO) together and divide into 4 patties. Cover and rest for 15 minutes before coating - this helps ingredients bind.

6) Gently coat cakes on both sides with flour, then dip on both sides in egg mixture, then dredge on both sides in panko mixture

7) Add cakes to skillet with EVOO. Cook until brown on both sides.

    as far as taste goes these are delicious, but they did not hold up well in the frying pan. I followed the recipe exactly..... - 11/22/09
