Ingredients

3 tbsp vegetable oil
1/2 tsp cumin seeds
1/2 cup chopped onions
2 tsp ginger garlic paste (its just a 50/50 mix of garlic and ginger blended together)
1.5 tsp coriander powder
1 tsp cumin powder
3/4 tsp turmeric powder
chili powder to taste
8 button mushrooms, cut into quarters
1/2 cup chopped tomatoes (use canned if you want)
3/4 tsp garam masala
1 tsp lemon juice
salt to taste (nutritional info for 1 tsp)
1 cup water (more as needed)
1.5 tbsp tomato paste
16oz frozen green peas
1 tbsp cilantro
Directions
1. Heat the oil on medium heat until hot.
2. Add the cumin seeds and saute until they get a little dark.
3. Add the chopped onions and cook for approx 3-4 minutes until they are translucent (add some water if you are worried about them burning).
4. Add ginger/garlic paste and continue to saute for a couple more minutes.
5. Add coriander powder, cumin powder, turmeric, and chili powder. Mix thoroughly.
6. Add mushrooms and cook until they are tender.
7. Add chopped tomatoes, garam masala, lemon juice, salt and water and cook for approx 10 minutes, stirring frequently.
8. Add tomato paste and cook for another 5 minutes. Add green peas and cilantro. When the oil separates from the spices, it is ready. Garnish with more cilantro if you'd like.
At any step, if it appears to be drying out, add more water.
