Introduction

This is an easy to prepare vegetarian dish with lots of flavor! You can lower the amount of soy sauce if you want lower sodium. I usually add extra ginger as well, as we like a strong ginger flavor. Ingredients

    * 1 bunch swiss chard
    * 2 green onions, chopped
    * 1/2 teaspoon paprika
    * 2 garlic cloves, chopped
    * 1/2 inch fresh ginger, chopped
    * 2 tablespoons soy sauce
    * 4 (12 ounce) blocks firm tofu, cut into 1-inch cubes
    * 1/4 cup green peas
    * 1 tablespoon oil
    * 1/4 teaspoon ground black pepper



Directions


1. Wash the Swiss chard and tear it into pieces, removing the stems (or use pre-bagged, pre-torn greens to save time).

2. Heat a little oil in a frying pan, and stir-fry the green onions, along with the paprika, ginger, and garlic.

3. Stir in the soy sauce, tofu, and peas. If peas are still frozen, cook until they are warmed.

4. In a separate frying pan, heat the sesame oil until it's hot.

5. Once heated, stir in the black pepper, then greens - be careful, as they will splatter as they are still wet. Toss to coat with oil and pepper. Cover the greens and let them steam until tender, stirring about every minute.

6. Spread 1/2 cup of cooked hot rice on a plate. Spread the greens on the rice, and pour the tofu mixture on top.

7. If you like things spicy, this is really good with Sriracha hot sauce! Enjoy!
