Number of Servings: 6

Ingredients

    1 lb extra lean ground beef (10% fat 90% lean)
    1 env taco seasoning mix
    1 cup water
    1 cup salsa
    3 cup cooked brown rice (1 1/2 cup dry instant prepared)
    1 cup mexi corn drained
    3/4 cup (3 oz.) reduced fat shredded Mexican cheese

Directions

Brown ground beef. Drain. Add all ingredients except cheese and rice. Mix thoroughly heat to boiling. Reduce heat and simmer 5 minutes. Mix in rice. Top with cheese. Turn off heat. Cover with lid until cheese is melted.
