Introduction

Crock pot meals are great, aren't they? This tastes better and is much cheaper than buying chicken parm. in a restaurant, and without major effort. Add a salad to make a full meal.

Using raw chicken breasts, rinsed and patted dry, is really the time-saver for this recipe. Precooking the chicken works, but isn't much less time than just doing it the "normal" way.

Number of Servings: 6

Ingredients

    3 whole chicken breasts, pre-split or split them yourself.
    1 package onion soup
    2 cans cream of mushroom soup
    1-1/2 cup skim or 1% milk
    1 cup of a light fruit juice (apple, white grape) or cider
    black pepper
    Grated Parmesan cheese
    1 cup uncooked brown rice

Directions

NOTE: these directions assume you're using raw chicken breasts to save time. If you precook the chicken breasts (about twenty minutes) you can cut the cooking time in half.

Mix all soups, liquids, and rice in a small bowl. Place the chicken breasts in the crock and lightly oil them, using your hands to spread the oil over the breasts and sides of the crock. Pour soup mixture over the chicken. Sprinkle black pepper to taste (if desired) over all, and then grate the Parmesan cheese over the top until it looks like enough cheese.

Cook for 8 to 10 hours on Low or 4 to 6 hours on High. If your chicken is precooked, cook on low for 4 hours.

Serves 6 people, one half-breast per person.

Variation: instead of the parmesan cheese use provolone; of course, then it's chicken provolone.

    This was really good! My whole family loved it....and so did the people I had over for dinner that night. paired it with a nice salad and it was a great and filling meal. - 2/24/10
