Introduction

I haven't tried these yet. I got the recipe from my neice, who makes them all the time for her 2 kids. She said they love them!!! I haven't tried these yet. I got the recipe from my neice, who makes them all the time for her 2 kids. She said they love them!!!

Ingredients

    1 cup packed brown sugar
    3/4 cup butter
    2 eggs
    2 tsp vanilla
    1 can chickpeas
    1 1/2 cups chocolate chips
    2 cups all purpose flour
    1/2 cup old fashioned oats
    1 tsp baking soda
    1/4 tsp salt

Directions

Coat a baking sheet with cooking spary. In a large bowl, withelectric mixer, beat the chickpeas until they are broken up and forming a paste. Add sugar and butter, mixing until smooth. Beat in the eggs and vanilla. Next add the flour, oats, baking soda and mix until a thick dough forms. Add Chocolate chips and mix on low speed. Drop the dough onto baking sheet and bake at 350 F, for 11 to 13 minutes, DO NOT OVERBAKE. Store in airtight container for up to 4 days.

    I love these cookies! And so do my kids. I like the chickpeas smashed up which hides them even more from the kiddos. Really glad to have this healthy snack for them! - 1/7/11
