Introduction

Adapted from SupertrouperJen's fruit cobbler recipe. You can substitute other fruits and use a blend of whole wheat and all purpose flours. I added ground flax seed to boost values. Ingredients

    2 c. blueberries (1 pint)
    1/2 c. Smart Balance Buttery Spread
    3/4 c. flour (could use blend of wheat and white)
    3/4 c. skim milk
    1/2 tsp. baking soda
    1 Tbsp. ground flax seed
    1 c. sucralose (like splenda)

Directions

6 servings. Preheat oven to 350 degrees. Recommend using a bit of flour to dust fruits to prevent their clumping together. Melt margarine in baking dish. I used 10 x 5 (approx) glass dish and melted margarine in microwave. Mix ingredients other than fruit and pour over margarine. DO NOT STIR. Scatter fruit over top. DO NOT STIR. Bake 45 minutes or until golden brown.
