Introduction
Makes for an easy breakfast, topped with cream cheese for delicious, nutritious breakfast on the go. Make and freeze. Makes for an easy breakfast, topped with cream cheese for delicious, nutritious breakfast on the go. Make and freeze.Number of Servings: 6
Ingredients

24 tbsp. flax meal
2 tbsp butter, melted
2 tsp vanilla extract (try another extract for a change, like almond, coconut or rum flavoured)
1 tbsp cinnamon (or more, or less if desired)
3 tsp "Splenda" brown sugar (use another sweetener if desired)
6 large eggs
3 tsp baking powder
1 extra small banana, mashed (optional)
2 tbsp/muffin of cream cheese (12 tbsp total per recipe)
Directions
1. mix all ingredients in a bowl
2. place into a six muffin tin, lightly oiled
3. bake at 325 for 15 min.
Cool, freeze into 6 portions.
For an easy complete breakfast, cut in half and top with 2 tbsp cream cheese.
