    One pie crust (I use homemade)
    2 links turkey Italian sausage (low fat)
    2 cups onions, chopped
    2 Tablespoons olive oil
    1/4 cup vermouth (or any wine)
    3 eggs
    3/4 cup (apx) fat free half and half
    1/4 cup grated Swiss cheese
    freshly ground black pepper


Brown sausages in skillet and then cut in thin pieces on diaginoally. Set aside. Meanwhile, cook chopped onions in olive oil until soft and add vermouth or wine and cook until liquid is evaporated (just takes a couple of minutes). Place onion mixture in crust and sprinkle with salt and pepper to taste. Break eggs into a measuring cup and add half and half until 1 1/2 cups liquid. Mix well. Pour over onions in crust and sprinkle with 1/4 cup grated Swiss cheese. Top with sausage slices arranged in a spoke patten. Sprinkle nutmeg on top to taste. Bake at 375 degrees F until brown on top, about 35 minutes. Serve warm or at room tempreture. 8 servings. May use any kind of cheese you like. May also add any herbs or other seasong to the egg mixture.
