Introduction

Although changes can be made to decrease the caloric intake, this is how my family likes these made. You can also use Italian seasonings instead of the parsley. Ingredients

    2 slices whole wheat bread
    1 pat butter
    2 1 oz slices mozzarella cheese (from skim milk)
    half a roma tomato, sliced
    1 mushroom, thinly sliced
    half a small garlic clove, thinly sliced
    .75 bell pepper, thinly sliced
    pinch of parsley

Directions

Heat skillet. Spread the butter on one side of each slice of bread. Add one slice of cheese to the dry side of the bread. Sprinkle garlic over slice of cheese. Layer tomato slices, mushrooms, and bell pepper over cheese. Add a dash of parsley and them top with other slice of cheese and bread with dry side down. When bread is golden, flip sandwich and toast other side. Personally, I like to have the sandwich assembled and then transfer it to the pan to help the cheese melt, but it can be made either way.
