Ingredients

    1 small bag dried black beans(soaked & drained)
    1 large can tomatoes
    1 16 oz bag frozen corn
    5-6 carrots , sliced
    1 small onion, diced
    1 clove garlic, minced
    1 pkg McCormick Taco Seasoning Mix
    1 tsp cumin
    1 tsp salt
    1 pound ground beef, cooked, drained, and rinsed in colander.

Directions

Soak beans overnight. Drain. Add to pot and cook with 6 cups water for 1 hour on medium heat. Add all other ingredients except ground beef. In skillet, cook ground beef and drain well. (rinse in colander)
Add to pot.
Cook on low 2 hours or until beans are tender.
I usually cook all this in my crockpot.
