Introduction

I first had this at a local Thai Restaurant (that is no more) and it was my favorite dessert. I tried to lighten it up a bit by using light coconut milk and reducing the amount of sugar I've seen in similar recipes.
This is a total comfort food!

Ingredients

    1 1/2 c white rice, long grain
    14 oz can light coconut milk
    2/3c water
    1 tsp salt
    2 Tbs sugar
    1 mango, sliced

Directions

In a large saucepan, heat the oil over medium-high heat. Add the rice and stir to coat with the oil. Add the coconut milk, water, sugar and salt; bring to a boil. Cover, reduce heat to low, and simmer about 20 minutes or until the liquid is absorbed.
Serve warm with slices of mango atop. (may be presented as a molded mound: fill a small bowl, press into shape, unmold onto plate)
