Introduction

An easy, fast, and lower fat version of this restaurant favorite. An easy, fast, and lower fat version of this restaurant favorite.

Ingredients

    • 1 1/2 lbs. lean ground beef
    • 1 package taco seasoning
    • 1 1/2 cup water
    • 2 cups romaine lettuce, shredded
    • 1 large tomato, diced
    • 1 cup shredded reduced fat sharp cheddar cheese (or cheese of choice)
    • 1- 6 oz. package corn chips

Directions

1. In skillet, brown ground beef and drain grease. Mix in water and taco seasoning and simmer, uncovered, until you have desired consistency.



2. Make bed of corn chips on plate, and place meat on top. Cover with tomatoes, lettuce and cheese, and serve.



Makes 5 servings.

    I rinsed the beef after draining the grease from it before adding the taco packet and lowered the fat content. I have also made it with just chili powder, cumin and a can of rotella and it turned fine. Iwas able to lower the sodium content for myself. Husband loved it. - 4/20/09

    I have been making this recipe for years as I don't like the mess of east regular Tacos. I use crumbled up taco shells, less fat than chips. I add , onions and black olives, no fat refried beans or kidney beans, and no fat sour cream. It then ibecomes a complete mea that we all love. - 4/25/08

    I make this with ground turkey add more veggies, what ever your preference is and use the whole wheat low carb tortillas to make my own chips. come on people instead of beating up the recipe change it, or just don't make it. sorry if that seems harsh, but some of the comments are harsh. - 4/20/09

    I took this to a group mtg & it was wonderful! I used very lean ground beef & it was very tastey! - 4/24/08
