Introduction

Ingredients

2 pounds frozen flounder filets - thawed and cut into 1 inch squares.
1 pound frozen scallops (small)
1 large onion, peeled and chopped
2 cans low sodium V8 juice
1 14.5 oz can petite diced tomatoes
Salt & pepper to taste
Directions
Put chopped onion in large pot, add juice and diced tomatoes. Bring to a boil, cut heat and allow to simmer for 15 - 20 minutes.
Add fish and scallops. Simmmer 30-45 minutes.
Makes 10 1cup servings, or 5 hearty 2 cup servings. (Nutrition assumes 10 servings)
