    small head cauliflower (about 4 cups)
    1/4 c skim milk
    pat butter
    1 tblsp parmesan or romano sheese


Steam cauliflower until soft. Mash with potato masher. Add milk, butter, salt and pepper to taste. Top with grated cheese.
