Ingredients

    1 Medium onion (chopped)
    2 Tbsp extra-virgin olive oil
    1 package (10 oz.) fresh spinach
    2 cans diced tomatoes
    2 cans condensed tomato soup
    2 cans Progresso Tomato Basil Soup
    Dried Basil 1-2 Teaspoons to taste
    Garlic Powder 1-2 teaspoons to taste
    Salt 1 teaspoon to taste
    Black pepper to taste
    Fat-free cream cheese (8oz.)

Directions

In large soup pot, saute onions in olive oil over medium-high heat until tender and transluscent. Reduce heat to medium, add spinach and cover pot for 3-4 minutes allowing spinach to wilt. Stir in fat-free cream cheese until melted and well incorporated. Add can soups and can tomatoes and seasoning to taste. Heat thoroughly stirring to prevent scorching. Makes approx. 10 1-cup servings.
