So we bought a bag of Baked Lays Parmesan Tuscan Herb chips, and as we ate them, I said..."These would be good crumbled and coating chicken to make oven fried chicken!" The next night, this recipe was born! It's so yummy, I didn't even miss it not being fried! Ingredients

6 boneless, skinless chicken breasts
2 servings Baked Lays Parmesan & Tuscan Herb chips
1 cup Corn Flakes
1 T. grated Parmesan cheese
2 T. Extra Virgin Olive Oil
1 T. Dried Onion Flakes
1 T. Italian Seasoning
1 t. Ground Rosemary
1 t. Garlic Powder
1 t. Onion Powder
1/2 t. Paprika
1/4 t. Ground Black Pepper
Parkay Fat Free Butter Spray
Directions
Crush chips and cornflakes, add to bowl. Mix remaining ingredients in with crushed flakes. Brush each breast with olive oil, then press into mixture, thoroughly coating each side. Place chicken onto foil lined baking sheet, spray tops with fat free butter. Bake at 425 for 30 minutes, turn chicken over and spray other side with fat free butter. (You may want to sprinkle any leftover mixture onto chicken before spraying) Bake for 10 additional minutes, then remove from oven. Yields 6 delicious, crunchy servings. You won't even miss it not being fried!
