Introduction

Ingredients

2 chicken breasts, cut into 1 inch pieces
1 package blue dragon medium egg noodles
4 tblespoon lime juice
1 tbspn brown sugar
2 tbspn lite soy sauce
2 tbsp water
2 tbsp fish sauce
1 - 2 tsp thai chili sauce
1 clove garlic finely chopped
1 inch chunk of ginger grated or chopped fine
2 tbspns scallion
Optional: basil and mint shredded for garnish - not in nutrition info
Directions
cut chicken into one inch pieces and marinate in 2 tbspns of lime juice for 15 minutes
mix rest of lime juice, brown sugar, water, thai chili sauce, soy sauce, and fish sauce in bowl and set aside
chop garlic, ginger and scallion
start water for noodles and heat up wok
heat tbspn oil in wok,
cook chicken and remove
meanwhile cook noodles for two minutes in water
in wok add ginger, garlic and scallion for 30 -45 sec
add drained noodles and toss then pour the sauce over them and stir after a minute or so add the chicken back in and heat up all
serve into 4 portions - if desired sprinkle basil and mint on top. YUMMY!!
