Ingredients

    1 c ground flaxseed (do not use whole flaxseed-you won't get the benefit)
    1 c whole wheat flour
    1 c oat bran
    1/2 cup brown sugar
    1/4 cup brown sugar splenda
    2 tsp baking soda
    1 tsp baking powder
    1/2 tsp salt
    2 tbs cinnamon
    1.5 c grated carrots (or chopped in food processor)
    1.5 c unsweetened applesauce
    3/4 cup 1% milk
    2 beaten eggs
    1 tsp vanilla extract

Directions

Mix flour, flaxseed, bran, sugar and dry ingredients together. Shred carrots and apples and add these along with blueberries to dry ingredients. Mix well. Mix milk, eggs and vanilla in a separate container and stir this into batter until well moistened. Spray muffin pan with non-stick spray. Use a 1/3 cup measure and fill muffin tins about 3/4 full and bake at 350* for 20 to 25 minutes.
Substitute any dried fruit for the blueberries. Nuts are good too, but to keep the carbs around 15 I did not add them. If you substitute an ingredient, the nutritional info needs to be adjusted.
Makes 24 med muffins, one muffin = one serving

    For some weird reason, the sugar wasn't included in the calorie count (when I looked at the breakdown/ingredient). So, use 1/2 c of splenda brown sugar=480 cal or 20 extra cal/muffin 1/4 c=240 cal or add 10cal/muffin. - 1/30/10

    Wow, I will be sure to look at the nutritional breakdown by ingredient on all of my recipes from now on to be sure all ingredients are accounted for. Thanks for bringing this up, I am a newly diagnosed diabetic, every little bit helps!

    Very Good
    I just made this recipe but have a question. It says to "grate the apples and carrots" but you call for applesauce in the recipe and not apples. Could you please clarify this for me? I left out the carrots as I didn't have any on hand and they turned out really well. - 2/3/11
