Introduction

A sugar-free, low-fat banana nut bran muffin. A sugar-free, low-fat banana nut bran muffin.
Number of Servings: 12

Ingredients

    240g (3 small) Bananas
    2 egg whites
    125ml (1/2 cup) skimmed milk
    1 tbsp oil
    100g (1.5 cups) Kellogs Sultana Bran
    150 (1 cup) flour
    50g (1.8oz) chopped pecans
    2 tsp baking powder
    1/4 tsp baking soda
    1 tsp mixed spice

Directions

Preheat oven to 180/350 degrees and line muffin tin with 12 paper cups.

Mash bananas and add egg whites, oil and milk.

Add Sultana Bran and leave for 10 minutes.

In another bowl, combine flour, baking powder, baking soda, chopped pecans and mixed spice.

Add dry mixture to wet mixtre and briefly stir.

Spoon a tablespoon of mixture into each muffin cup.

Bake for 25 minutes.
