Introduction

This is not my original recipe but someone's mother made it and it is Really good, filling and low in calories.
Great with a side salad.

Number of Servings: 10

Ingredients

    1/2 onion, diced
    ½ tsp. Thyme
    2 cloves of garlic, minced
    4 carrots, diced – med
    4 stalks of celery, diced - med
    1 russet potato, peeled and diced
    Jenny O Turkey Ham 2 lb piece

    6 cups of Water
    1 cup chicken stock or vegetable stock

    1 1lb bag of dried split peas (rinsed)
    1 bay leaf
    Salt and pepper to taste

Directions

Put Split Peas, bay leaf, onion and water into cooking pot. Bring to a boil. Boil for 10 min. Remove from heat. Let stand 1 hr.

Add Thyme, garlic and ham to the pot. Salt and pepper to taste. Cook over medium low heat for 1 1/2 hours.

Add the carrots, celery and potatoes then cook for an additional 30-45 minutes or until the vegetables are tender. Remove bay leaf. If you want it to be a bit thicker, mix with an immersion blender for a few seconds. Enjoy.
Makes 10 1-cup serving
