Ingredients

    2 T unsalted Butter
    1 sm Onion, minced
    4 cloves Garlic, minced
    1- 14.75 oz can Bumble Bee Wild Alaskan Pink Salmon
    1/2 t Morton Nature's Seasons
    1 t dried Basil
    1 slice Wheat Bread crumbs (about 1/4 c)
    1 T Kraft Mayo with Olive Oil
    1 stalk Celery, finely chopped
    1 Egg, extra large
    1 T Olive Oil
    1/4 c Flour

Directions

Melt butter in skillet and add onions and garlic. Cook until soft and translucent. Remove from heat let cool.

In a lg mixing bowl, combine salmon (you can remove bones if you'd like), seasonings, bread crumbs, mayo, celery, and eggs. Mix well. Add onions and garlic when cooled and mix well. Form into 4 patties, cover with plastic wrap, and refrigerate for 30 minutes to an hour.

Dredge patties in flour. Heat oil in lg skillet over med heat. Fry patties until outsides are crisp and browned, about 4-5 minutes per side.

Makes 4-4inch patties/ 4 servings

    i like salmon and recipe looks easy to follow. Iam going to try it and see how it turns out. - 1/31/10
